Roasted Garlic & Herb Sourdough Scrolls

Dough

Wet Ingredients

  • 150g active sourdough starter
  • 325g warm water
  • 25g honey
  • 20g olive oil

Dry Ingredients

  • 500g bread flour
  • 10g salt

Garlic Herb Filling

Classic Version

    • 120g very soft butter
    • 5 large garlic cloves, crushed
    • 2 tbsp finely chopped fresh parsley
    • 2 tbsp finely chopped chives
    • 1 tbsp finely chopped oregano (or 1 tsp dried)
    • 1 tsp thyme leaves
    • ½ tsp cracked black pepper
    • 1 tsp flaky sea salt
    • 30g grated Parmesan
    • 1 tsp garlic powder (gives a deeper garlic flavour)

Mix everything together into a smooth spread.


Cheesy Garlic Version (Highly Recommended)

Add to the above:

  • 150-200g grated mozzarella
  • Extra 40g grated Parmesan

Spread the garlic butter over the dough first, then sprinkle the cheeses evenly before rolling.

The mozzarella melts beautifully while the Parmesan adds incredible flavour.


The Next Day

Step 1

Remove dough from fridge.

Step 2

Preheat oven to 200°C.

Step 3

Turn dough onto a lightly floured bench.

Shape into a rectangle approximately 40 x 30cm.

Step 4

Spread the garlic butter mixture right to the edges.

If making the cheesy version, sprinkle over the mozzarella and Parmesan.

Step 5

Roll tightly from the long edge.

Step 6

Cut into 8 large scrolls or 10-12 smaller ones.

Place into a lined baking dish.

Step 7

Cover loosely with foil.

Bake:

  • 30 minutes covered
  • Remove foil
  • Bake another 15-18 minutes until deep golden.


Garlic Butter Finish (This makes them amazing)

As soon as they come out of the oven brush generously with:

  • 40g melted butter
  • 1 crushed garlic clove
  • 1 tbsp chopped parsley
  • Pinch flaky sea salt

Brush while they're piping hot.


Optional Cheese Finish

Sprinkle with:

  • Freshly grated Parmesan
  • Chopped parsley
  • Cracked pepper

Serve warm.


My favourite version

Roasted Garlic & Three Cheese Sourdough Scrolls

Instead of raw garlic:

  • Roast 2 whole garlic bulbs until caramelised.
  • Squeeze out the soft roasted garlic and mix into the butter.
  • Add:
    • 120g mozzarella
    • 50g Parmesan
    • 40g tasty cheddar
    • Fresh parsley
    • Chives
    • Thyme
    • Cracked pepper

The roasted garlic gives a sweeter, richer flavour without overpowering the scrolls, while the blend of mozzarella, Parmesan and cheddar creates a gooey centre with a beautifully golden top. Brushed with garlic herb butter straight from the oven, they taste like something you'd get from an artisan bakery or high-end café.
